I’m not a fan of the food prep methods where you make food and pack an entire week’s worth of lunches on Sunday nights. Let’s be real, by Friday – that beautiful salad in a mason jar is a little wilted and a lot less appetizing. While this may work for some people – I like to keep my meals fresh and flexible depending on my mood.
What I am a fan of is preparing healthy, easy food that will last in the fridge and can be used several different ways – depending on my food mood each day that week.
Here is my food prep for this week:

Kale chips – these are so easy to make. My daughter will eat a whole bunch of kale toasted into chips in one day. These didn’t last long in our house and make for an easy, crunchy, healthy snack. Simply clean 1 bunch of kale and tear or cut the leaves from the thick stems. I like to rip them into bite-sized pieces. Line a cookie sheet with parchment paper, spread the kale on the sheet and drizzle with 1 Tablespoon of olive oil and sprinkle with salt. Bake at 350 degrees for 10-12 minutes.

Roasted beets – I simply scrub the beets clean, put them in foil and roast them in the oven for 1 hour at 375 degrees or until I can pierce them easily with a fork. Once roasted they peel easily. I dice them to eat as a side dish for dinners or to put on salads. This salad I call my Fall goth salad because of the dark, gorgeous colors. It’s: spinach, roasted beets, an apple, tart dried cherries, toasted walnuts and goat cheese. It comes together so quickly for a lunch on-the-go when the beets and nuts are already prepared.
Toasted walnuts – I love to top salads with nuts for the crunch and texture and they are also an easy go-to in a yogurt parfait or in oatmeal.
Hard-boiled eggs – these are ready for breakfasts, lunch boxes, to make into egg salad sandwiches or sliced on a salad for added protein.
Our fridge is full with easy, healthy grab-and-go foods that we can use all week.
